Flies

The basic approach
If we are to keep it simple,
It's essentially about streamer flies,
Truly 'realistic' flies have a place in the arsenal of course, but I think most of the flies that I tie are more 'impressionistic,' I want a few key elements and a profile that 'swims.' I'm looking for versatility and the mechanics to fish through structure, mangrove roots and oyster bars. This usually means flys with weed guards and keel hooks.
I want it to be durable, the Everglades is a tough environment with a lot of tackle grabbing structure and toothsome critters so I favor syntheteic materials.
Absolutely beautiful flies, made with bird feathers and fox fur, will definitely catch fish in the Everglades, it's a tough environment though, everything has teeth and defenses.`A five pound gafftopsail catfish can ruin your perfectly tied tarpon fly and slime your whole leader in a heartbeat.
synthetic material whenever possible, and simple.

simplify the "choosing the fly," part. Function, profile, color, fishability
And to emphasize the fishing part. The casting and retrieve.
size, profile, running depth, snag resistance, bouyancy and wind resistance,
anything that wiggles is good.
Like rabbit strips.
Sometimes weighted, flies with lead eyes, for diveability, even basic clousers are good to have along.
Sometimes with bead chain, for dragging up mud clouds in shallow water.

a go to fly

One store-bought brand that fulfills a lot of these characteristics is the Puglisi line of streamers. This is a #1 finger mullet with a weed guard, I always make sure to have a pocketful of these on board. It's a good match for mosquito fish, Gambusia.
